Night and Day is determined by the clock on your actual computer change the time on your computer to midnight and you should be able to evolve it after you evolve it you can change the time back

I think I was just walking around everytime I checked he was holding a new item.

It worked for me I had a Dedenne in my fairy gym and when it didn't have a held item it picked up random items for me when I was out and about.

That must be a glitch with the new version 4.2.1 cause on 4.2.0 that has never been a problem for me I don't know what you do.
